Foodie Friday-Ground Chicken Quesadilla with Tomato “Salsa” Salad

I’m great…after just eating my delicious ground chicken quesadilla! 🙂 Mexican food is one of my favourite types of cuisines. Crunchy textures, spicy flavours and ooh that cheese! What’s not to love? Well…a lot of restaurant style mexican food is unhealthy and calorie laden…that’s why my awesome ground chicken saves the day with its tasty and crunchy guilt free deliciousness. Served along side my Tomato “Salsa” Salad, this is the perfect meal when you are craving a healthy bite of Mexico.

Quesadilla Recipe:

1 Pound of Ground Chicken Breast

4 Spinach Wraps

4 Thin Slices of Pepper Jack Cheese

Bell Pepper, sliced into thin strips

1/2 Onion, finely diced

1/2 Cup of Water

1. Brown Ground Chicken and Onion in a frying pan. Then stir in your homemade “taco” seasoning (recipe below) and 1/2 cup of water. Cover and simmer on a low heat for about 10-15 minutes (until liquid is absorbed)
2. Preheat oven to 350 degrees. Layer chicken mixture, bell peppers, and Pepper Jack cheese in tortilla and fold in half. Bake in the oven for 5-10 minutes until tortilla is crispy and slightly brown. Cut into pieces. Serve with a side of your Tomato “Salsa” salad.

Taco Seasoning:

1 Tsp Cumin

1 Tsp Paprika

1 Tsp Onion Salt

1 Tbsp of Garlic Powder

1 Tbsp of Chilli Powder

1 Tsp of Oregano

1 Tsp of Black Pepper

1. Mix together seasoning ingredients in a bowl, set aside

Tomato “Salsa” Salad

4 Tomatoes, roughly chopped

1/2 onion, diced

1/2 cup of Cilantro

Juice from Half a Lemon

Tabasco (optional..to taste)

1 Tsp Salt

1 Tsp of Black Pepper

Mix together tomato, onion, cilantro, lemon juice, and s & p in a bowl. Add a few dashes of tabasco for a bit of spice if desired. Cover and refrigerate until ready to eat.
